Method

  1. 1

Preheat the oven to 425°F with a rack in the upper third of the oven.

  2. 2

In a sheet pan, combine the chicken thighs, sliced potatoes, onion wedges, sea salt, smoked paprika, black pepper, and avocado oil; toss to coat evenly.

  3. 3

Arrange the chicken pieces on top of the vegetables, leaving some of the potatoes and onions exposed.

  4. 4

    Roast for 35 minutes.

  5. 5

Remove the pan and drizzle the honey over the chicken, then drizzle the Cholula hot sauce on top.

  6. 6

Return the pan to the oven and roast for an additional 10 minutes, or until the chicken is glazed and reaches at least 165°F internal temperature (about 175°F for thighs). If desired, broil for a few minutes for extra caramelization.

  7. 7

Finish by squeezing fresh lemon juice over the dish and sprinkling with chopped parsley.

Tips while you cook

Even coating before roasting
Toss the chicken, potatoes, and onions with oil and seasonings before placing them on the pan.
Add glaze mid‑cook
Drizzle honey and hot sauce after the first 35‑minute roast for a glossy finish.
Finish with fresh lemon
Squeeze lemon juice over the dish right before serving for brightness.
