Method
In a stand mixer, combine the flour, yeast, and sugar and mix.
Kitchen notes · Added by ReelsMeals: Dry ingredients are evenly distributed. Ensure yeast is well mixed with flour to activate evenly.
Gradually add the water until a homogeneous dough forms.
Kitchen notes · Added by ReelsMeals: Dough comes together without dry patches. Add water slowly to control hydration.
Turn the dough onto a lightly floured work surface and knead until smooth.
Kitchen notes · Added by ReelsMeals: Dough is smooth and elastic. Knead until the dough springs back when lightly pressed.
Place the dough in a bowl dusted with flour and let it rise for 30 minutes.
Kitchen notes · Added by ReelsMeals: Dough has doubled in size. Cover the bowl with a damp cloth to prevent drying.
Roll the dough out on a floured surface to about 5 mm thickness and roll it up on itself as shown in the video.
Kitchen notes · Added by ReelsMeals: Dough is evenly thin and rolled tightly. Use a light dusting of flour to prevent sticking.
Cut the rolled dough into 11 pieces and let them proof on parchment squares for another 30 minutes.
Kitchen notes · Added by ReelsMeals: Pieces have puffed slightly. Space them well apart on the parchment to allow expansion.
Steam the pieces for about 17 minutes, leaving enough space between them because they will expand considerably during cooking.
Kitchen notes · Added by ReelsMeals: Panini are puffed and firm to the touch. Do not overcrowd the steamer; they will expand significantly.
