Roasted Carrots with Edamame Dip

Ingredients

  • 1 1/10 lb carrots
  • 1 1/2 tbsp olive oil
  • 1 tbsp date paste
  • 1/2 tsp paprika powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 1/10 oz edamame
  • 2 tbsp tahini
  • 1 tbsp olive oil
  • 0.85 cup water
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1 cloves garlic
  • granola
  • pistachios
  • parsley

Instructions

  1. Clean all ingredients thoroughly. Cut the carrots in half lengthwise. If the carrots are very large, cut them in half again so that you end up with four pieces.
  2. Combine all ingredients, including the cut carrots, in a bowl and mix everything together with your hands.
  3. Place the carrots in the oven at 180°C (350°F) for about 30 minutes.
  4. In the meantime, prepare the edamame dip. Cook the edamame in boiling water for a few minutes, then blend with the remaining ingredients in a mixer. The more liquid you add, the creamier the dip will be.
  5. Finally, place the dip on a plate, arrange the carrots on top, and use parsley, chopped pistachios, and granola as a topping.
