Roasted Carrots with Edamame Dip

Ingredients
- 1 1/10 lb carrots
- 1 1/2 tbsp olive oil
- 1 tbsp date paste
- 1/2 tsp paprika powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 1/10 oz edamame
- 2 tbsp tahini
- 1 tbsp olive oil
- 0.85 cup water
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1 cloves garlic
- granola
- pistachios
- parsley
Instructions
- Clean all ingredients thoroughly. Cut the carrots in half lengthwise. If the carrots are very large, cut them in half again so that you end up with four pieces.
- Combine all ingredients, including the cut carrots, in a bowl and mix everything together with your hands.
- Place the carrots in the oven at 180°C (350°F) for about 30 minutes.
- In the meantime, prepare the edamame dip. Cook the edamame in boiling water for a few minutes, then blend with the remaining ingredients in a mixer. The more liquid you add, the creamier the dip will be.
- Finally, place the dip on a plate, arrange the carrots on top, and use parsley, chopped pistachios, and granola as a topping.
