Method

  1. 1

Freeze a lemon half and hollow out the interior to create a lemon shell vessel.

  2. 2

Scoop fresh ricotta gelato and fill the hollowed lemon shell, leaving space for the center filling.

  3. 3

Pipe a swirl of folded ricotta cream into the center of the lemon shell on top of the gelato.

  4. 4

Add a layer of golden lemon curd over the ricotta cream.

  5. 5

Pipe a tall swirl of additional ricotta cream around the rim of the lemon shell.

  6. 6

Place a crispy meringue flower on top of the cream swirl.

  7. 7

Drizzle a small amount of lemon curd or sauce onto the center of the meringue flower.

  8. 8

Serve the assembled lemon shell dessert immediately.
