One-Pot Chicken Over Rice

Recipe by Mr. Dots on InstagramAdded 1 November 2026.

20 minutes to prep, 30 to cook. A hearty one‑pot chicken and rice dish that combines juicy marinated thighs with fluffy, flavor‑infused rice. The aromatic blend of yogurt, lemon, and spices keeps the chicken tender, while a fresh kachumber salad adds a crisp, refreshing contrast. Perfect for busy weeknights with minimal cleanup.

Sweat aromatics and tomato paste in the pan.

  6. 6

Add the washed rice to the pan.

  9. 9

Stir the mixture with a wooden spoon.

  10. 10

Return the chicken to the pot, cover, and reduce heat to low.

  11. 11

  12. 12

Rest for 15 minutes, then fluff the rice.

  13. 13

Garnish the finished dish with fresh coriander leaves.

  14. 14

Serve with kachumber salad and enjoy.
