15 minutes to prep, 35 to cook. A fragrant one‑pan dinner that pairs juicy, spice‑rubbed chicken thighs with coconut‑infused basmati rice. Method
Add the chicken thighs to a bowl.
Add oil to the chicken, then season with salt, black pepper, garlic powder, onion powder, paprika, cumin, oregano, thyme, and basil (1 tsp of each). Add lemon juice and mix well; let the chicken marinate while you prepare the vegetables.
Dice the onion, bell pepper, and chillies; thinly slice the scallions; mince the garlic.
Heat a large pan over medium-high heat and add a little oil.
Place the marinated chicken thighs in the pan and cook for about 3 minutes on each side until browned.
Remove the chicken and set aside; add the diced onion, bell pepper, chillies, and scallions to the pan and sauté for 3 minutes until softened.
Add the minced garlic and cook for another 2 minutes, stirring constantly.
Stir in the same dry seasonings used for the chicken (1 tsp of each) and a squeeze of fresh lemon juice.
Add the washed basmati rice to the pan and fry for a few minutes, stirring to coat the grains with the flavors.
Pour in the coconut milk followed by the chicken stock, bring the mixture to a gentle boil, then place the browned chicken thighs on top of the rice.
Reduce the heat to low, cover the pan with a lid, and simmer for 25–30 minutes, or until the rice is tender and the chicken is cooked through.
Remove the pan from heat, sprinkle freshly chopped parsley over the dish, and let it rest for a couple of minutes.
Serve hot, adding extra parsley if desired.
