No-Bake Lactation Cookies

Ingredients

  • 2 cup Rolled Oats
  • 1 cup Creamy Peanut Butter
  • 1/2 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Pure Honey
  • 1/2 cup Chia Seeds or Ground Flaxseeds
  • 1 tbsp Pure Vanilla Extract
  • 4 tbsp Brewer's Yeast

Instructions

  1. In a large mixing bowl, combine the rolled oats, creamy peanut butter, and pure honey. Mix until well combined and a dough forms.
  2. Fold in the semi-sweet chocolate chips, chia seeds or ground flaxseeds, and pure vanilla extract until they are evenly distributed throughout the dough.
  3. Add the brewer's yeast to the dough and mix until it is fully incorporated.
  4. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to allow the flavors to meld and the dough to firm up.
  5. Once the dough is chilled, use a cookie scoop or your hands to form the dough into balls, about 1 inch in diameter. You should end up with around 36 balls.
  6. Place the balls onto a baking sheet lined with parchment paper and refrigerate for an additional 10-15 minutes to set.
  7. Serve the no-bake lactation cookies chilled, straight from the refrigerator. You can store them in an airtight container in the refrigerator for up to 5 days or freeze them for up to 2 months.
  8. If freezing, simply place the cookies in a single layer in a freezer-safe bag or container and store in the freezer. When you're ready to eat one, simply thaw at room temperature or in the refrigerator.
