20 minutes to prep, 5 to cook. These Nashville Hot Mozzarella Sticks are extra crispy on the outside and molten on the inside, coated in a spicy‑sweet hot oil that delivers a fiery kick. Freezing the sticks before frying ensures maximum crunch, and the quick brush of hot oil gives them their signature heat.

Method

  1. 1

Slice the low‑moisture mozzarella into ½‑1 inch sticks, lightly dust them with flour, and freeze for 1 hour.

  2. 2

Dip the frozen mozzarella sticks into the beaten eggs, coat with breadcrumbs, then dip again in eggs and breadcrumbs for a double coating.

  3. 3

Heat oil to 350°F and fry the mozzarella sticks straight from frozen for 2–3 minutes, until golden, crispy, and puffed; do not overcrowd the pan.

  4. 4

While frying, combine the hot oil, cayenne pepper, paprika, garlic powder, and brown sugar to create the Nashville hot oil.

  5. 5

Immediately after removing the sticks, brush or toss them in the hot oil while still steaming.

  6. 6

Serve right away with ranch dressing.

Fry from frozen, avoid crowding
Fry the sticks straight from frozen for 2–3 minutes; do not overcrowd the pan.
Brush with hot oil immediately
After frying, brush or toss the sticks in the hot oil while they are still steaming.
