Method
Preheat the oven to 350°F (350°F).
Simmer the 14 oz pasta sauce on the stovetop for about 25 minutes until reduced to roughly 1 cup.
Kitchen notes · Added by ReelsMeals: Sauce thickens and reduces by about half. Stir occasionally to prevent sticking.
Slice each chicken breast in half, then pound the pieces flat without shredding.
Kitchen notes · Added by ReelsMeals: Chicken pieces are even in thickness. Place between plastic wrap before pounding.
Mix 1 tsp oregano with 1 tsp garlic powder and sprinkle the seasoning over the chicken.
Heat 1 tbsp olive oil in a skillet over medium heat and fry each chicken piece for 1–2 minutes per side until golden brown and cooked through.
Kitchen notes · Added by ReelsMeals: Chicken is golden brown on each side. Do not overcrowd the pan; cook in batches if needed.
Arrange the cooked chicken pieces in a baking dish, covering the bottom of the dish.
Spread the reduced sauce evenly over the chicken.
Layer the sliced mozzarella cheese on top of the sauce.
Add the sliced pepperoni over the mozzarella.
Bake in the preheated oven for 25–30 minutes, until the cheese is melted and the chicken is fully cooked.
Kitchen notes · Added by ReelsMeals: Cheese is melted and bubbly, chicken is cooked through.
Remove from the oven, let rest briefly, then serve.
