Ingredients
- 1 1/10 lb chicken tenders
- 2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tsp onion powder
- 1 1/2 tsp paprika
- 3/4 tsp cayenne pepper
- 1 egg
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 3 tbsp unsalted butter
- 1/2 cup hot sauce
- 3/8 cup honey
- 1 tsp brown sugar
Instructions
- In a large bowl, combine the chicken tenders with 1 teaspoon of garlic powder, salt, black pepper, 0.5 teaspoons of onion powder, 0.5 teaspoons of paprika, and 0.25 teaspoons of cayenne pepper. Mix until evenly coated.
- Add 1 egg to the bowl and mix until the chicken tenders are well coated. Marinate for 15-20 minutes.
- Prepare the coating by whisking together 1 cup of all-purpose flour, 0.5 cups of cornstarch, 1 teaspoon of baking powder, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, 0.5 teaspoons of cayenne pepper, and 1 teaspoon of brown sugar in a separate bowl until well combined.
- Dredge each chicken tender in the flour mixture, pressing lightly so the coating adheres. Shake off any excess.
- Heat oil to 170-175°C (340-350°F) in a deep frying pan. Fry the chicken in batches until golden brown and crispy, about 5-7 minutes per batch. Transfer to a wire rack and let rest briefly.
- Melt 3 tablespoons of unsalted butter over low heat in a saucepan. Add 0.5 cups of hot sauce, 0.375 cups of honey, and 0.5 teaspoons of cayenne pepper, stirring until fully combined. Remove from heat and keep warm.
- Place the hot chicken in a large mixing bowl. Drizzle with the warm hot honey sauce and toss quickly to coat.
- Sprinkle lightly with the hot honey rub (made from the remaining coating mixture) and toss once or twice. Serve immediately.
- Garnish with chopped fresh herbs or scallions, if desired.
