Method

  1. 1

Divide the strawberries, water, maple syrup, and lemon juice into two 32‑oz glass mason jars (or one large jar) and stir well until the maple syrup is fully dissolved.

  2. 2

Cover each jar with a clean breathable cloth secured with a rubber band to keep dust out while allowing natural yeasts to enter.

  3. 3

Leave the jars at room temperature for 2–3 days, stirring once daily, until bubbles form and a light fruity fermentation smell appears.

  4. 4

When the mixture is bubbly and lightly tangy, strain out the strawberry solids and transfer the liquid into clean flip‑top bottles, leaving about 1‑2 inches of headspace.

  5. 5

Seal the bottles and let them sit at room temperature for 1–3 days to build carbonation, burping the bottles once a day to prevent excess pressure.

  6. 6

Once carbonated to your liking, move the bottles to the refrigerator and serve cold over ice.

Tips while you cook

Dissolve syrup thoroughly
Stir the mixture until the maple syrup is completely dissolved before covering.
Daily stir during fermentation
Stir the jars once each day while they ferment for 2–3 days.
Burp bottles daily
Open each bottle once a day while carbonating to release excess pressure.
Refrigerate after carbonation
Move the bottles to the refrigerator once they reach desired fizz.
