20 minutes to prep, 30 to cook. Dirty Spaghetti is a hearty, Cajun‑spiced pasta dish packed with ground beef, sausage, and colorful vegetables. The smoky, seasoned sauce clings to al dente spaghetti, while butter, green onions, and Parmesan add a bright, savory finish.

Method
Bring a large pot of salted water to a boil, add the spaghetti and cook until just al dente; reserve 1 cup of pasta water, then drain and set aside.
Heat a large pan over medium-high heat, add the ground beef, ground Italian sausage, and optional smoked sausage; break up the meat and cook until browned and fully cooked, then drain excess grease, leaving a little for flavor.
Add the onion, green bell pepper, red bell pepper, and celery to the pan and sauté for 5–7 minutes until softened; stir in the minced garlic and tomato paste and cook for 1–2 minutes.
Season the mixture with Cajun seasoning, smoked paprika, onion powder, garlic powder, Italian seasoning, black pepper, cayenne pepper, and salt as needed; continue cooking uncovered for 15–20 minutes, stirring occasionally and adding reserved pasta water if the sauce becomes too thick.
Add the drained spaghetti to the meat sauce, toss until every strand is coated, then finish by stirring in butter, chopped green onions, parsley, and optional grated Parmesan cheese.
Tips while you cook
- Reserve pasta water
- Set aside 1 cup of the cooking water before draining the spaghetti for later sauce adjustment.
- Leave a bit of grease
- After browning the meat, drain excess grease but keep a little in the pan for flavor.
- Add butter at the end
- Stir butter into the sauce just before mixing in the pasta for extra richness.
- Adjust sauce thickness
- If the sauce thickens during the 15–20 minute simmer, add reserved pasta water gradually.
