Method

  1. 1

Finely dice the yellow onion, dice the red bell pepper, and dice the jalapeño peppers; set each aside separately.

  2. 2

Core the small head of green cabbage and roughly chop it into bite‑size pieces; set aside.

  3. 3

Heat a pan over medium heat, add 1 tbsp olive oil, then add the onion, garlic, a pinch of salt and pepper, and sauté until translucent.

  4. 4

Add the ground beef, taco seasoning, smoked paprika, and cayenne pepper; break up the meat with a spatula and cook until browned.

  5. 5

Stir in the diced bell pepper and jalapeño, pour in the bone broth, then add the chopped cabbage and a pinch of salt; cover and steam over medium heat for 10–15 minutes until the cabbage softens.

  6. 6

Uncover and cook for another 3–4 minutes, stirring well so the cabbage coats in the juices and most of the liquid is absorbed.

  7. 7

Serve as is, or top with sour cream, chopped cilantro, and a squeeze of fresh lime if desired.

Tips while you cook

Sauté aromatics first
Cook the onion, garlic, salt, and pepper until translucent before adding the beef.
Break up meat thoroughly
Use a spatula to crumble the ground beef while it cooks.
Steam then finish cabbage
Cover and steam the cabbage with broth for 10–15 minutes, then uncover and cook 3–4 minutes to absorb liquid.
