Ingredients
- 2 tbsp olive oil
- 1 white onion
- 3 garlic
- 1 tsp paprika
- 1 tsp oregano
- 1 cup tomato puree
- 1 1/2 lbs chicken breast
- 1 cup orzo
- 1/2 cup sun-dried tomatoes
- 1 cup low-fat cream
- 2 cups vegetable stock
- to taste salt & pepper
- 1/2 cup parmesan cheese
- 1/4 cup fresh basil
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute, until fragrant.
- Add the chicken breast to the skillet and cook until browned on all sides and cooked through, about 5-6 minutes.
- Remove the chicken from the skillet and set aside.
- Add the paprika and oregano to the skillet and cook for 1 minute, until fragrant.
- Add the tomato puree, vegetable stock, and sun-dried tomatoes to the skillet. Stir to combine.
- Bring the mixture to a simmer and let cook for 5 minutes, until the sauce has thickened slightly.
- Add the orzo to the skillet and cook, stirring constantly, until the orzo is tender and the liquid has been absorbed, about 8-10 minutes.
- Stir in the low-fat cream and cook for an additional 2 minutes, until the sauce has thickened to your liking.
- Add the cooked chicken back to the skillet and stir to combine with the orzo and sauce.
- Season with salt and pepper to taste.
- Transfer the creamy marry me chicken orzo to a serving dish and top with grated parmesan cheese and chopped fresh basil.
- Serve hot and enjoy!
