Method

  1. 1

Combine lukewarm milk, 1 tbsp powdered sugar, and yeast; let the mixture sit for a few minutes until foamy.

  2. 2

In a large bowl, whisk together the all‑purpose flour, 0.25 tsp salt, and 2 tbsp oil.

  3. 3

Add the yeast mixture to the dry ingredients and knead until a smooth, soft dough forms; cover and let it rise for about 45 minutes or until doubled in size.

  4. 4

Punch down the dough, shape it into small balls, and let them rest for 10 minutes.

  5. 5

Heat oil in a deep pan to about 350°F (350°F); fry each bomboloni for about 1 minute per side until golden and puffed, then remove and drain on paper towels.

  6. 6

While the bomboloni cool slightly, melt the dark chocolate with the fresh cream over low heat, stirring until smooth, and add a pinch of salt to finish the ganache.

  7. 7

Roll the warm bomboloni in powdered sugar, then drizzle or dip them with the chocolate ganache before serving.
