Cheesy Chickpea Shakshuka Bake

Recipe by Alex Hall on InstagramAdded 24 September 2026.
  • 1 hr 15 min

10 minutes to prep, 1 hour 5 minutes to cook. A hearty, protein-packed breakfast or dinner that blends smoky spices, chickpeas, and a creamy egg base into a comforting bake. The layers of roasted vegetables, harissa, and melted cheddar create a savory, slightly spicy flavor profile, while the fresh yogurt and coriander finish it off with a bright, tangy note.

Method

  1. 1

Preheat the oven to 375°F (375°F).

  2. 2

In a large baking dish, combine the diced red onion, diced garlic, diced red pepper, ground coriander, smoked paprika, cumin, salt, pepper, and drizzle with olive oil. Mix well.

  3. 3

Bake the mixture for about 20 minutes until the vegetables are softened.

Kitchen notes · Added by ReelsMeals: The vegetables are softened before the chickpeas and tomatoes go in. Check the pepper and onion texture before continuing.

  4. 4

Add the harissa paste, drained chickpeas, and chopped tomatoes to the dish. Stir to combine.

  5. 5

Return the dish to the oven and bake for another 20 minutes.

Kitchen notes · Added by ReelsMeals: The tomato mixture is bubbling after its second bake. Stir the harissa through the base so it is evenly distributed.

  6. 6

Zest a lemon directly over the baking dish.

  7. 7

Crack the eggs into the baking dish.

  8. 8

Bake again for 20 minutes until the eggs are set.

Kitchen notes · Added by ReelsMeals: The eggs are set in the tomato mixture. Check the centers before adding the cheese.

  9. 9

Scatter shredded cheddar cheese over the top and bake for an additional 5-10 minutes until the cheese is melted and golden.

Kitchen notes · Added by ReelsMeals: The cheddar is melted and golden. Keep an eye on the top during this final bake.

  10. 10

Remove from the oven, let cool slightly.

  11. 11

Portion the baked dish into serving bowls.

  12. 12

Top each portion with a dollop of Greek yogurt and a sprinkle of chopped coriander.
