Method

  1. 1

Transfer broccoli from strainer to a hot pan.

  2. 2

Add 1 cup water to the pan and cover, steaming the broccoli until tender.

  3. 3

Season the chicken thighs with 2 tablespoons oil, garlic powder, onion powder, and chicken seasoning (including the red spice rub).

  4. 4

Heat the oil in a skillet over medium heat.

  5. 5

Cook the seasoned chicken in the skillet, flipping to brown both sides, until fully cooked.

  6. 6

Remove the chicken, chop it into bite‑sized pieces, and set aside.

  7. 7

In the same pan, add the two cans of Campbell's Condensed Cream of Chicken Soup and stir until a silky sauce forms.

  8. 8

Stir in the Kobe jack cheese and mild cheddar cheese until melted and smooth.

  9. 9

Combine the steamed broccoli, cooked rice, and chopped chicken in a large bowl, then pour the cheese‑soup sauce over and fold until everything is evenly coated.

  10. 10

Transfer the mixture to a baking dish, sprinkle additional cheese on top, and scatter crushed Ritz crackers for crunch.

  11. 11

Bake at 375°F for about 5 minutes, or until the topping is golden and the casserole is hot throughout.

  12. 12

    Serve warm and enjoy.
