Method

  1. 1

Preheat the oven to 350°F. Cut a lid off the apples and core them, leaving the bottom intact.

  2. 2

Place the apples in a baking dish, add 1 tbsp water, loosely cover with aluminium foil and bake for 15 minutes.

  3. 3

Mix the granola, raisins, cinnamon, maple syrup, melted butter and a pinch of salt; fill the pre‑baked apples generously.

  4. 4

Bake uncovered for another 15–20 minutes, until the apples are soft but still hold their shape; cover with foil if the filling begins to darken.

  5. 5

Combine the quark with vanilla extract, lemon zest and, if desired, honey.

  6. 6

Spoon the lemon‑vanilla quark onto each apple, place the warm apple on top, and finish with extra granola and a pinch of cinnamon.

Tips while you cook

Cover loosely during the first bake
Place the apples in a baking dish, add water, and loosely cover with foil for the initial 15‑minute bake.
Fill after pre‑baking
After the first bake, fill the apples with the granola mixture before the second bake.
Re‑cover if filling darkens
If the filling begins to darken during the second bake, cover the apples with foil.
