- 4Stir in the tomato purée and cook for 4‑5 minutes, stirring often, until the mixture darkens and thickens.
- 5Transfer the sauce to a blender (or use an immersion stick blender) and blend until completely smooth and silky.
- 6Return the blended sauce to the pan, stir in the double cream (or mascarpone) and season with salt and black pepper. Simmer gently for 2‑3 minutes until the sauce is glossy and cohesive.
- 7While the sauce simmers, bring a large pot of salted water to a boil, add the rigatoni or penne, and cook until al dente according to package instructions.
