Method
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground chicken, season with salt and pepper, brown completely, and set it aside.
Kitchen notes · Added by ReelsMeals: Chicken is browned and no longer pink. Break up the ground chicken with a spatula for even browning.
Ground chicken is removed from the pot and set aside in a separate bowl.
The empty pot is returned to the heat source to begin the next stage of cooking.
Add a splash of olive oil to the empty pot.
Add the chopped leeks and onions to the pot.
Sauté the chopped carrots, leeks, and onion in the pot, stirring until they begin to soften and become fragrant.
Kitchen notes · Added by ReelsMeals: Vegetables are softened and fragrant. Stir occasionally to prevent sticking.
Add the pumpkin puree to the pot and stir to combine.
Pour in both cartons of chicken bone broth and the rinsed cannellini beans.
Bring to a gentle simmer and let it cook until the carrots are tender and the flavors deepen.
Kitchen notes · Added by ReelsMeals: Carrots are fork-tender. Simmer gently to meld flavors without boiling hard.
Add the cooked ground chicken back into the pot along with the fresh chopped kale. Stir just until the kale is wilted.
Kitchen notes · Added by ReelsMeals: Kale is bright green and wilted. Do not overcook; kale should retain some texture.
Serve warm, topped with freshly chopped parsley, a bright squeeze of fresh lemon juice, and a drizzle of extra virgin olive oil.
