Method

  1. 1

Toss the chicken with teriyaki sauce, then refrigerate to marinate for 2–4 hours.

  2. 2

Preheat the oven to 400°F (400°F). In a sheet‑pan, whisk together smooth peanut butter, grated ginger, minced garlic, rice vinegar, honey, chili paste, soy sauce, and water. Stir in the green onions and julienned carrot, then add the mafaldine pasta, pressing it into the liquid as much as possible.

  3. 3

Place an elevated rack over the pan and arrange the marinated chicken on top. Bake for 25 minutes, then baste with the reserved extra teriyaki sauce and continue baking for about 20 minutes more, until the chicken reaches an internal temperature of 165°F (165°F) and the noodles are tender. If desired, broil for up to 5 minutes, watching closely.

  4. 4

While the chicken bakes, toss all cucumber‑salad ingredients together in a bowl.

  5. 5

Remove the rack, toss the noodles in the pan sauce, slice the chicken, and serve the chicken over the peanut‑chili noodles with the cucumber salad on the side. Garnish with the remaining green onions and toasted sesame seeds.

Tips while you cook

Marinate for flavor
Allow the chicken to marinate in teriyaki sauce for 2–4 hours before baking.
Press pasta into sauce
Press the mafaldine pasta into the peanut‑chili sauce.
Baste midway
Baste the chicken with the reserved extra teriyaki sauce halfway through baking for a glossy glaze.
Prep salad while baking
Toss the cucumber‑mint salad while the chicken bakes.
