Method

  1. 1

Reverse-butterfly fillet the whole sea trout as shown in the video.

  2. 2

Place the fish flesh‑side up in a vacuum bag with lemongrass, kaffir lime leaves, Thai basil, ginger, garlic, lime zest and a drizzle of neutral oil; seal and refrigerate for 30‑60 minutes to marinate.

  3. 3

Preheat the grill to 475°F. In a braising dish, arrange the sliced shallots and the marinated fish skin‑side up, pour in enough dry white wine to cover the flesh while keeping the skin exposed, and warm the liquid to about 50‑140°F.

  4. 4

Grill the fish for 5‑8 minutes until the skin is crisp and the flesh is cooked through; remove and keep warm.

  5. 5

In a deep pot bring a portion of the braising liquid to a boil, add the mussels, cover and cook until they open.

  6. 6

Remove the mussels, then add coconut milk and single cream to the pot; reduce the sauce to the desired consistency and finish by whisking in butter.

  7. 7

Serve the mussels and coconut‑cream sauce alongside the grilled and braised sea trout.

Warm wine before adding fish
Heat the dry white wine to about 50‑60 °C before placing the fish on the grill.
Use the braising liquid for the sauce
Boil a portion of the braising liquid to cook the mussels, then build the sauce in the same pot.
