Method

  1. 1

Blend the fried onions, green chilies, ginger-garlic paste, and cardamom pods with a little water to make a smooth paste.

  2. 2

In a pot, combine the boneless chicken, yogurt, Schezwan sauce (if using), lemon juice, turmeric powder, red chilli powder, coriander powder, garam masala powder, and salt.

  3. 3

Add the prepared birista paste and mix thoroughly until the chicken is well coated with the spices.

  4. 4

Stir in oil and ghee, then add chopped coriander and kasuri methi; mix well.

  5. 5

Cover the pot and cook over medium‑low to medium heat, stirring occasionally.

  6. 6

Cover again and cook for another 10‑15 minutes, or until the chicken is fully cooked.

  7. 7

Adjust the consistency: keep as is for a semi‑dry salan, or add a little water and simmer for a saucier gravy.

  8. 8

Garnish with freshly chopped coriander and serve hot with paratha, roti, or rice.

Tips while you cook

Make a smooth birista paste first

Coat chicken before adding the paste
Combine chicken with yogurt, Schezwan sauce, lemon juice, and spices, then mix in the birista paste.
Stir occasionally while cooking covered
Cover the pot and cook over medium‑low to medium heat, stirring occasionally to prevent sticking.
Adjust gravy consistency at the end
If a saucier gravy is desired, add a little water after the chicken is cooked and simmer briefly.
