30 minutes to prep, 4 hours to cook. A sweet‑and‑savory smoked ham coated in a pineapple‑bourbon glaze that caramelizes into a crunchy, fragrant crust. The smoky flavor from the pellet grill pairs perfectly with the bright fruit and rich bourbon notes, making it an impressive centerpiece for Easter or any holiday feast.

Method

  1. 1

Preheat the pellet grill to 225°F (225°F) and set up a drip tray with triple‑layered foil to catch glaze while allowing airflow beneath the ham.

  2. 2

Remove the skin from the ham, score the surface lightly, and place the ham on the rack in the grill.

  3. 3

Smoke the ham for about 3 to 4 hours, or until it reaches a deep golden color and an internal temperature of 140°F (140°F).

  4. 4

While the ham is smoking, prepare the glaze: combine the pineapple preserves, dark molasses, honey, bourbon, brown sugar, and dried mustard in a saucepan and simmer until smooth.

  5. 5

When the ham has a good color (about 3 hours in), begin brushing the glaze over the surface every 15 minutes.

  6. 6

Continue glazing until the ham is glossy and the glaze has caramelized, about 30 minutes more.

  7. 7

Remove the ham from the grill, let it rest for 10 minutes, then slice and serve.

Tips while you cook

Glaze timing
Begin brushing the glaze onto the ham every 15 minutes once it has smoked about 3 hours.
Rest before slicing
Let the ham rest for 10 minutes after removing it from the grill before slicing.
Drip tray setup
Use a triple‑layered foil drip tray to catch glaze while allowing airflow beneath the ham.
