20 minutes to prep, 30 to cook. This reimagined San Gennaro sausage and pepper sandwich gets the chopped‑cheese treatment, with diced peppers, onions, and melted provolone blended into the meat for every bite. A bright bomba sauce of roasted garlic, cherry peppers, and Calabrian chili adds a spicy kick, while broccoli rabe provides a bitter‑sweet contrast, delivering a hearty street‑food experience at home.

Method
Prepare the bomba sauce: combine roasted garlic, olive oil, cherry peppers, Calabrian chili, salt, and garlic‑infused oil in a blender; blend until smooth and emulsified, then set aside.
Trim and cut broccoli rabe into bite‑size pieces, rinse, and keep moist.
Heat a small pot over medium‑high heat, add a splash of garlic‑infused oil, and toast sliced garlic until lightly browned.
Add the broccoli rabe to the pot, cover with a lid, and shake to sauté‑steam until bright green, about 1 minute; season with salt and a splash of lemon juice, then remove from heat.
Heat a griddle or large skillet over medium‑high heat, add a little oil, and place the sausage slices on it; press with a weight to achieve good contact and brown one side, then flip and brown the other side, cooking for about 10 minutes total. Remove sausage and set aside.
In the same pan, add a bit more oil and sauté the diced peppers and onions, cooking first on medium‑low then raising to medium‑high until softened and lightly colored; stir in sliced garlic near the end.
Combine the cooked sausage with the pepper‑onion mixture, mixing thoroughly so the cheese will melt into the meat.
Add provolone slices on top of the meat mixture on the hot griddle; cover briefly to allow the cheese to melt and become incorporated into the meat.
Slice the toasted Italian roll open, spread a generous layer of bomba sauce on the interior, then pile in the sausage‑pepper‑cheese mixture.
Top with the sautéed broccoli rabe and sprinkle grated pecorino cheese.
Close the sandwich, cut in half, and serve immediately.
