15 minutes to prep, 12 to cook. These Real Cheddar Bay Biscuits are buttery, flaky, and packed with sharp cheddar and a hint of Old Bay seasoning. The dough stays cold for tender layers, and a quick bake gives them a golden, cheesy crust—perfect as a side or snack.

Method

  1. 1

Sift all dry ingredients (flour, salt, baking powder, baking soda, Old Bay, and grated cheddar) into a bowl.

  2. 2

Add the cold, grated unsalted butter and work it into the flour mixture with your hands until evenly distributed.

  3. 3

Return the dough to the freezer to keep it cold.

  4. 4

Dump the biscuit mix onto a surface and slowly drizzle in the buttermilk, mixing just until shaggy to avoid over‑developing gluten.

  5. 5

Roughly shape the dough into a rectangle, fold it once, then roll out to the desired thickness.

  6. 6

Cut out biscuits with a ring mold.

  7. 7

Brush the tops with a little melted butter mixed with Old Bay and sprinkle with any remaining grated cheddar.

  8. 8

Bake at 400°F for a short burst, then reduce the temperature to 350°F and bake for an additional 7 minutes until golden.

Tips while you cook

Keep dough cold
Return the dough to the freezer after mixing butter to maintain a cold temperature before shaping.
Mix buttermilk gently
Drizzle in the buttermilk and stir only until the dough is shaggy.
Brush tops before final bake
Apply melted butter mixed with Old Bay and any remaining cheddar before the reduced‑heat baking stage.
