Method

  1. 1

    Roast pumpkin for ramen base.

  2. 2

    Dice pumpkin into chunks.

  3. 3

Transfer diced pumpkin to a bowl and roast the chunks until tender.

  4. 4

Blend roasted pumpkin with garlic, red chilies, lime, coconut milk and vegetable stock to create a smooth ramen paste.

  5. 5

Heat the ramen paste in a pan, stirring until warmed through.

  6. 6

Add coconut milk and vegetable stock to the pan and stir to combine.

  7. 7

Set up a breading station with three components: flour, egg wash, and breadcrumbs.

  8. 8

Coat pumpkin strips in flour, dip in egg wash, then roll in breadcrumbs.

  9. 9

    Heat oil in a pan.

  10. 10

Fry the breaded pumpkin strips in hot oil until golden and crispy, turning with tongs as needed.

  11. 11

Assemble the ramen bowl: add yellow soup base, sliced radishes, fried breaded strips, and green onion slices.

  12. 12

Garnish the bowl with additional sliced radishes, fried breaded strips, and green onion slices.
