Method

  1. 1

Sauté cumin seeds, onion, and garlic in a little oil until fragrant.

  2. 2

Add the dried guajillo chilies and continue to sauté briefly.

  3. 3

Add the canned pumpkin and vegetable broth, then blend the mixture with apple cider vinegar until smooth to create the sauce.

  4. 4

Spread a thin layer of the pumpkin sauce on the bottom of a glass baking dish.

  5. 5

Quickly fry each corn tortilla in oil for a few seconds on each side.

  6. 6

Fill each tortilla with shredded cheese and black beans, roll them up, and place them seam‑side down in the baking dish.

  7. 7

Pour the remaining pumpkin sauce over the rolled enchiladas and sprinkle with extra shredded cheese.

  8. 8

Cover the dish with foil and bake at 375°F for about 15 minutes.

  9. 9

Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

  10. 10

Sprinkle chopped green herbs over the baked enchiladas.
