Method

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the chicken thigh pieces, season with salt, black pepper, onion powder, garlic powder, paprika, smoked paprika, peri peri seasoning, and lemon juice, and brown until lightly cooked.

  3. 3

Stir in the diced white onion, chopped garlic, all the diced bell peppers, sliced green chilli, and heaped tomato puree; cook for 3–4 minutes until softened.

  4. 4

Add the additional spices: turmeric, coriander powder, cumin powder, extra peri peri seasoning, and oregano; mix well.

  5. 5

If using, pour in the peri peri sauce and sprinkle the fresh coriander.

  6. 6

Add the rice, vegetable stock, and the remaining lemon juice; bring to a gentle boil.

  7. 7

Reduce heat, cover, and simmer for about 15–20 minutes, or until the rice is tender and the liquid is absorbed.

  8. 8

Remove from heat, let stand covered for 5 minutes, then fluff with a fork and serve.
