Method

  1. 1

Add the macaroni directly to a large pot and pour in enough full‑fat milk to fully cover the pasta.

  2. 2

Bring the mixture to a gentle simmer, stirring regularly to keep the pasta from sticking, and cook until the milk has reduced and the pasta is just tender, about 10–12 minutes.

  3. 3

Add the cauliflower florets to the pot and continue cooking until the cauliflower is tender, approximately 5 minutes.

  4. 4

Season the mixture generously with salt, black pepper, and, if desired, a pinch of nutmeg.

  5. 5

Stir in the grated cheddar, shredded mozzarella, a knob of butter, and a dollop of Dijon mustard, mixing until the cheese melts into a smooth, creamy sauce.

  6. 6

Transfer the mac and cheese to a baking dish, sprinkle with additional cheese, a little extra black pepper, and a pinch of sea salt.

  7. 7

Broil or grill the dish for about 5 minutes, or until the top is golden and bubbling.

  8. 8

Serve hot, either straight from the pot or from the baked dish.
