Method

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the diced onion, chopped celery, minced garlic, and diced carrot; sauté until softened and fragrant, about 5 minutes.

  3. 3

Stir in the pinch of chili flakes and cook for another minute.

  4. 4

Add the crushed tinned tomatoes and beef stock, bringing the mixture to a gentle boil.

  5. 5

Add the orecchiette pasta and the Parmesan rind; reduce heat and simmer for about 10 minutes, or until the pasta is al dente and the rind has melted into the broth.

  6. 6

Stir in the drained chickpeas and spinach; cook until the spinach wilts, about 2 minutes.

  7. 7

Season the soup with black pepper to taste.

  8. 8

Ladle the soup into bowls, drizzle with a little extra virgin olive oil, and top with grated Parmesan cheese before serving.

Simmer pasta with rind
Add the orecchiette and Parmesan rind together, then simmer for about 10 minutes until the pasta is al dente and the rind melts.
Add greens at the end
Stir in the chickpeas and spinach last, cooking only 2 minutes until the spinach wilts.
