Method

  1. 1

Season the chicken thighs with salt and pepper, then sear them in a large pan with olive oil over medium‑high heat until browned on all sides; remove and set aside.

  2. 2

In the same pan, add the diced onion and a pinch of salt, cooking over medium heat until softened, then add the minced garlic and cook briefly until fragrant.

  3. 3

Stir in the crushed red pepper flakes, then add the chopped spinach and pour in the water, covering the pan briefly to wilt the spinach.

  4. 4

Add the orzo, low‑sodium chicken stock, the seared chicken pieces, and drained chickpeas; bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes until the orzo is tender.

  5. 5

When the orzo is cooked, stir in the lemon juice, crumbled feta, and minced parsley; season to taste and optionally fold in tahini for extra richness.

  6. 6

Serve hot, adjusting salt or pepper if needed.

Tips while you cook

Keep the pan hot after searing
Set the seared chicken aside and continue cooking the vegetables in the same hot pan.
Cover briefly to wilt spinach
When adding water with the spinach, cover the pan for a short time.
Add lemon, feta, and parsley at the end
Stir in lemon juice, crumbled feta, and minced parsley after the orzo is tender for fresh flavor.
Fold in tahini just before serving
If using tahini, mix it in at the final step for extra richness.
