Servings
Ingredients
- 1 1/10 lb mutton
- 1 onion
- 3 cloves garlic
- 1 tbsp ginger
- 2 tomato
- 2 cups water
- salt, to taste
- black pepper, to taste
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 2 tbsp oil
Instructions
- 1Heat 2 tbsp oil in a pressure cooker over medium heat.
- 2Add the chopped onion and sauté, stirring frequently, until it turns golden brown, about 5–6 minutes.
- 3Stir in the minced garlic and grated ginger; cook for 1 minute, allowing the aromatics to release their flavor.
- 4Add the diced tomatoes, reduce the heat slightly, and cook until the tomatoes soften and break down, about 4 minutes.
- 5Sprinkle in the cumin powder, turmeric powder, and red chili powder; stir for 30 seconds to toast the spices.
- 6Add the mutton cubes, mixing well so each piece is coated with the spice mixture; cook for 2–3 minutes to sear the meat.
- 7Pour in 2 cups of water, then season with salt and black pepper to taste; give everything a good stir.
- 8Close the pressure cooker lid securely, bring to high pressure, and cook for 25 minutes.
- 9Turn off the heat and allow the pressure to release naturally (approximately 10 minutes).
- 10Open the lid, give the stew a gentle stir, and simmer uncovered for an additional 5 minutes to thicken the broth if needed.
- 11Taste and adjust seasoning with more salt or pepper if desired.
- 12Serve the hot mutton stew with steamed rice or warm naan.
