Method

  1. 1

In a large bowl, combine the yoghurt, lemon juice, olive oil, paprika, ground coriander, ground turmeric, sliced red onion, chopped coriander, sea salt and cracked black pepper, mixing until smooth. Add the chicken thighs and toss thoroughly so every piece is well coated.

  2. 2

Cover the bowl and refrigerate for at least 2 hours, or overnight for maximum flavor; a minimum of 30 minutes will still impart good taste.

  3. 3

Preheat the oven to 350°F fan‑forced. Pack the marinated chicken tightly into a lined loaf tin, pressing it down firmly so there are no gaps.

  4. 4

Cover the tin loosely with foil and bake for 40 minutes. Remove the foil and continue baking for a further 15 minutes, until the top is lightly golden and the chicken is cooked through, with clear juices bubbling.

  5. 5

Allow the loaf to rest in the tin for 10 minutes, then lift it out using the baking paper. Slice thickly or thinly and drizzle with any juices collected in the tin.

Tips while you cook

Plan the marination time

Use foil then uncover
Cover loosely with foil for the first 40 minutes, then remove foil for the final 15 minutes.
Rest before slicing
