- 2 inch ginger
- 2 tsp saffron
Instructions
- 1Gather all ingredients and measure them out; set the masala spices (coriander seeds, red chillies, cinnamon sticks, cardamom pods, garlic, turmeric, ginger, saffron) aside.
- 2Make the masala paste: add the whole spices, garlic, ginger, and turmeric to a blender with a splash of water and grind to a smooth paste.
- 3Heat 1 cup of ghee in a heavy‑bottomed pot over medium heat until shimmering.
- 4Add the sliced onions and sauté, stirring occasionally, until they turn deep golden brown (about 10‑12 minutes).
- 5Stir in the prepared masala paste and cook, stirring continuously, for 8‑10 minutes until the raw aroma disappears and the oil begins to separate.
- 6Add the mutton pieces, coating them well with the masala. Increase the heat slightly and sear the meat for 3‑4 minutes.
- 7Pour in enough water to just cover the meat, bring to a boil, then reduce to a gentle simmer. Cover and cook for 30‑35 minutes, or until the mutton is tender.
- 8Season the curry with salt to taste and add the lemon juice, mixing well.
- 9Whisk the curd with the saffron strands (shahjeera) until smooth, then gently stir the mixture into the simmering curry.
