Method
Buffalo Chicken Potato
Microwave a large russet potato for about 5 minutes, then wrap in foil, rub with oil and salt, and bake until the interior reaches 205°F.
Fry chicken cubes in oil, seasoning with salt, chicken stock powder and minced shallot, then brown and break into pieces.
Heat buffalo wing sauce in a pan, add the cooked chicken and coat well.
Drizzle blue cheese sauce over the baked potato, add the buffalo chicken, a splash of extra blue cheese sauce, and finish with sliced spring onions.
Chili Cheese Potato
Prepare the potato the same way as above (microwave then bake).
Sauté oil, then add chili powder, cumin, smoked paprika, and grated red onion; stir in tomato paste to form a paste.
Add ground beef, salt, and brown; then add canned peeled tomatoes and simmer until thickened.
Top the baked potato with grated cheddar, the hot chili, chopped white onion, pickles, sour cream, and coriander.
BBQ Pork with Slaw Potato: Prepare the potato as before (microwave then bake).
BBQ Pork with Slaw Potato: Cook pork cubes in oil with a pinch of salt, add water to cover three‑quarters of the pan, and braise for about 90 minutes until tender; continue cooking until water evaporates and pork browns.
BBQ Pork with Slaw Potato: Make jalapeño‑cilantro coleslaw by mixing thinly sliced cabbage, pickled carrots, diced jalapeño, cilantro, celery seed, a splash of vinegar, and mayonnaise.
BBQ Pork with Slaw Potato: Slice the baked potato, fluff the interior, drizzle blue cheese sauce, add shredded pork, more blue cheese sauce, and finish with spring onions.
