Method
Gather all ingredients and equipment: a food processor or blender, three small mixing bowls, a whisk, and a measuring cup.
Prepare the Avocado Lime Sauce: place the avocado flesh, 0.25 cup Greek yogurt, 1 tbsp lime juice, 1 minced garlic clove, a pinch of salt and pepper, and a splash of water into the blender; blend until completely smooth. Transfer to a bowl and set aside.
Taste the avocado sauce and adjust seasoning or thin with additional water or yogurt if a thinner consistency is desired.
Prepare the Cilantro Yogurt Sauce: in a separate bowl combine 0.5 cup Greek yogurt, 0.25 cup chopped cilantro, 1 tbsp lime juice, 1 tsp cumin, 1 minced garlic clove, and a pinch of salt and pepper; whisk until fully incorporated.
Taste the cilantro sauce and add extra lime juice, salt, or pepper to suit your preference.
Prepare the Chipotle Lime Sauce: in a third bowl whisk together 0.25 cup light mayonnaise, 1 tbsp chipotle in adobo sauce, 1 tbsp lime juice, 1 tsp honey, and a pinch of salt and pepper until the mixture is creamy and uniform.
Adjust the chipotle sauce by adding a little more honey for sweetness or extra chipotle for heat, if desired.
Cover each sauce bowl with plastic wrap and refrigerate for at least 5 minutes to allow flavors to meld.
While the sauces chill, grill or bake chicken breasts (about 6‑8 minutes per side, or until internal temperature reaches 165°F/165°F).
Kitchen notes · Added by ReelsMeals: grilled or baked chicken. Serve the cooked chicken with the three chilled sauces.
Serve the warm chicken with the three sauces on the side or drizzled over the top, allowing diners to choose their favorite flavor.
