Hazelnut Cream Tart

Ingredients

  • 6 eggs
  • 11 oz sugar
  • 7 1/10 oz chocolate
  • 7 1/10 oz hazelnuts
  • 7 1/10 oz sugar
  • 1 1/10 qt whipped cream
  • 4 2/5 oz sugar

Instructions

  1. Beat eggs with sugar until stiff. Pour into three circles and bake in the oven for about three hours at 90°C.
  2. Let cool and brush with melted chocolate.
  3. Roast hazelnuts in the oven for 12 minutes at 180°C. Meanwhile, let sugar caramelize and stir in warm nuts. Pour onto a piece of baking paper and let cool.
  4. Beat whipped cream with sugar until stiff.
  5. Assemble the tart with layers of cream and whipped cream. Cover with whipped cream and top with nougatine.
  6. Best to store in the freezer and then thaw in the refrigerator.
