20 minutes to prep, 1 hour to cook. A hearty, high‑protein bake that layers sweet caramelized onions with tender chicken and fluffy jasmine rice, all smothered in a blend of mozzarella and Gruyère. The aromatic seasoning blend adds depth, and a quick broil creates a golden, bubbly cheese crust—perfect for meal‑prep or a comforting dinner.

Method

  1. 1

    Preheat the oven to 400°F.

  2. 2

Heat olive oil in a skillet over medium‑low heat, add the sliced onions with a pinch of salt, and cook, stirring occasionally, for about 20 minutes until deeply golden and caramelized.

  3. 3

In a 9×13‑inch baking dish combine the uncooked jasmine rice, diced chicken breast, caramelized onions, minced garlic, Worcestershire sauce, bone broth, and the seasoning blend; stir to ensure the rice is fully submerged and everything is evenly distributed.

  4. 4

Cover the dish tightly with foil and bake for 40–50 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F.

  5. 5

Remove the foil, sprinkle the shredded mozzarella and Swiss Gruyère over the top, and return to the oven uncovered for 8 minutes until melted and bubbly.

  6. 6

Broil for 1–2 minutes to create a golden cheese crust.

  7. 7

Garnish with fresh parsley, divide into 6 servings, and serve.

Tips while you cook

Caramelize onions fully before mixing
Cook the sliced onions with a pinch of salt for about 20 minutes until deeply golden before adding them to the baking dish.
Keep the dish tightly covered while baking
Cover the baking dish tightly with foil for the 40–50 minute bake to retain moisture and ensure the rice cooks evenly.
Stir until rice is fully submerged
When combining ingredients, mix until the uncooked jasmine rice is completely covered by the broth mixture.
Uncover for the final cheese melt
After removing the foil, bake uncovered for 8 minutes before broiling.
