Method

  1. 1

Cut each tortilla in half and shape the halves into boat-like containers; seal the edges by brushing a mixture of equal parts flour and water (the "tortilla glue") along the sides and pressing together.

  2. 2

Place the assembled tortilla boats on a baking sheet and bake in a preheated oven at 350°F for 5–10 minutes, or until the edges are lightly browned and firm.

  3. 3

In a shallow bowl, whisk the egg. Dip each chicken breast tender into the egg, then coat thoroughly with the finely crushed cornflakes.

  4. 4

Arrange the coated chicken tenders in the air‑fryer basket and cook at 350°F for 10–12 minutes, flipping halfway through, until the coating is golden and the chicken reaches an internal temperature of 167°F.

  5. 5

Fill each baked tortilla boat with shredded lettuce, diced tomato, thinly sliced red onion, the crispy chicken tenders, and drizzle with kewpie mayonnaise and sriracha kewpie mayonnaise.

Tips while you cook

Seal tortilla edges
Brush the flour‑water mixture along the sides and press to seal before baking.
Flip chicken halfway
Turn the chicken tenders halfway through the air‑fryer time.
Watch boat baking time
Bake the tortilla boats 5–10 minutes until edges are lightly browned and firm.
