Method

  1. 1

Prepare the tartar sauce: In a bowl combine mayonnaise, Greek yogurt (optional), roughly chopped pickles, capers, roughly chopped dill, roughly chopped parsley, Dijon mustard, lemon juice, and a pinch of salt; whisk until smooth and set aside.

  2. 2

Set up a breading station: Place all‑purpose flour in one shallow dish, the beaten egg in a second, and panko breadcrumbs seasoned with a pinch of salt in a third.

  3. 3

Pat the cod fillets dry with paper towels. Dredge each fillet in flour, dip into the beaten egg, then coat thoroughly with the seasoned panko breadcrumbs. For extra crunch, repeat the egg and breadcrumb coating once more.

  4. 4

Heat vegetable oil in a deep pan or fryer to approximately 350°F (340°F). Carefully lower the breaded fillets into the hot oil and fry for 3–4 minutes, or until the coating is golden brown and the fish is cooked through. Transfer to paper towels to drain excess oil.

  5. 5

Toast the burger buns until lightly browned. On the bottom half of each bun, place a slice of cheddar cheese, then add a fried cod fillet. Generously drizzle the homemade tartar sauce over the fish, top with the bun lid, and serve immediately.

  6. 6

Optionally serve with lemon wedges or a side salad.
