30 minutes to prep, 5 to cook. Chitoi Pitha is a traditional Bengali rice cake with a soft, spongy interior and a sweet coconut‑jaggery topping. The batter is made from soaked raw and parboiled rice blended into a smooth liquid, then cooked on a pan. A fragrant mixture of shredded coconut, fried onions, and jaggery adds a delightful sweetness and texture.
