Method

  1. 1

Marinate the chicken pieces with curd, salt, black pepper, ginger paste, and garlic paste; mix well and let rest for 15 minutes.

  2. 2

Heat oil and butter in a large pan over medium heat, add the chopped onions and sauté until golden brown, about 5–6 minutes.

  3. 3

Add the marinated chicken to the pan and stir‑fry on high heat for 3–4 minutes until the surface is lightly browned.

  4. 4

Cover the pan, reduce the heat to low‑medium, and cook for about 20 minutes, stirring occasionally, until the chicken is tender and the oil separates from the gravy.

  5. 5

Add the dry‑roasted spice mix (cumin seeds, coriander powder, fennel seeds, green cardamom, cloves, cinnamon stick, mace, nutmeg, dry red chillies) and the cashew‑almond paste; cook for an additional 5 minutes, adding a splash of hot water only if the mixture looks too thick.

  6. 6

Stir in fresh cream, kasuri methi, and the chopped coriander; simmer for 2 minutes to combine flavors.

  7. 7

Serve the hot Chicken Maharani alongside soft parotta.

Tips while you cook

Rest the marinated chicken
After mixing the chicken with curd, salt, pepper, ginger and garlic pastes, let it rest for 15 minutes before cooking.
Stir occasionally while simmering
Cover the pan and cook on low‑medium heat for about 20 minutes, stirring occasionally.
Adjust sauce thickness if needed
If the gravy looks too thick after adding the spice mix and nut paste, splash a little hot water before continuing.
Add cream at the end
Stir in fresh cream, kasuri methi, and chopped coriander, then simmer for just 2 minutes to combine flavors.
