Black Forest Kirsch Cookies
A delicious cookie version of the classic Black Forest cake, with a chocolate cookie base, a white chocolate and cream filling, and a kirsch marmalade topping.

Ingredients
- 12 oz flour
- 7 1/10 oz butter
- 3 1/2 oz powdered sugar
- 1 tsp vanilla sugar
- 1 egg
- 2 tbsp cocoa powder
- 7 1/10 oz white chocolate
- 3 1/2 oz cream
- 8 4/5 oz kirsch marmalade
- 1 tbsp kirsch
- 3 1/2 oz bitter white chocolate
- chopped chocolate
Instructions
- Knead the dough from all ingredients, flatten it, and let it rest in the fridge for 30-60 minutes.
- Preheat the oven to 160°C (180°C for top and bottom heat).
- Roll out the dough to 3 mm thickness, cut out circles (half with a hole), and bake for 10-12 minutes.
- For the filling: heat the cream, pour it over the chopped white chocolate, and let it cool.
- Dip the top halves in melted bitter white chocolate and sprinkle with chocolate shavings, let it dry.
- Whip the white chocolate cream and fill it into a piping bag, pipe it onto the bottom halves.
- Add a bit of kirsch marmalade in the middle and place the top half on top.
