Black Forest Kirsch Cookies

A delicious cookie version of the classic Black Forest cake, with a chocolate cookie base, a white chocolate and cream filling, and a kirsch marmalade topping.

Black Forest Kirsch Cookies

Ingredients

  • 12 oz flour
  • 7 1/10 oz butter
  • 3 1/2 oz powdered sugar
  • 1 tsp vanilla sugar
  • 1 egg
  • 2 tbsp cocoa powder
  • 7 1/10 oz white chocolate
  • 3 1/2 oz cream
  • 8 4/5 oz kirsch marmalade
  • 1 tbsp kirsch
  • 3 1/2 oz bitter white chocolate
  • chopped chocolate

Instructions

  1. Knead the dough from all ingredients, flatten it, and let it rest in the fridge for 30-60 minutes.
  2. Preheat the oven to 160°C (180°C for top and bottom heat).
  3. Roll out the dough to 3 mm thickness, cut out circles (half with a hole), and bake for 10-12 minutes.
  4. For the filling: heat the cream, pour it over the chopped white chocolate, and let it cool.
  5. Dip the top halves in melted bitter white chocolate and sprinkle with chocolate shavings, let it dry.
  6. Whip the white chocolate cream and fill it into a piping bag, pipe it onto the bottom halves.
  7. Add a bit of kirsch marmalade in the middle and place the top half on top.
