15 minutes to prep, 20 to cook. Apple Pie Protein Cookies are a high‑protein snack that blends sweet, cinnamon‑spiced apples with a moist oat‑based dough. Greek yogurt keeps them tender, while optional milk lets you adjust the texture, making them perfect for post‑workout nourishment.

Method

  1. 1

Preheat the oven to 350°F (350°F) and line a baking sheet with parchment paper.

  2. 2

In a skillet over medium heat, combine the diced apples, maple syrup, cinnamon, lemon juice and zest, and a pinch of salt; cook for 6–8 minutes, stirring occasionally, until the apples are soft.

  3. 3

Transfer the cooked apple mixture to a shallow dish and place it in the freezer for a few minutes to cool quickly.

  4. 4

In a large mixing bowl, whisk together the vanilla protein powder, oat flour, old-fashioned oats, Greek yogurt, and honey until a cohesive dough forms.

  5. 5

If the dough feels too dry, stir in the optional milk a little at a time until the desired consistency is reached.

  6. 6

Fold the cooled apple mixture into the dough, mixing just enough to distribute evenly.

  7. 7

Divide the dough into 10 equal portions, roll each into a ball, and place them on the prepared baking sheet, spacing them about 2 inches apart.

  8. 8

Bake the cookies for 12 minutes, or until the edges are lightly golden and the centers are set.

  9. 9

Remove from the oven and let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Add milk gradually

Space cookies on sheet
