20 minutes to prep, 30 to cook. A flavorful, oil‑light chicken fry that becomes irresistibly crispy in the air fryer. Indian spices, ginger‑garlic paste, and a light coating of cornflour and besan give a crunchy exterior while keeping the meat juicy, making it perfect for a quick dinner.

Method
In a large bowl, combine the chicken pieces with ginger-garlic paste, lemon juice, salt, red chilli powder, turmeric powder, coriander powder, black pepper powder, cumin powder, food colour, kasuri methi, chaat masala, garam masala, cornflour, besan, and curd. Mix thoroughly until every piece is evenly coated.
Kitchen notes · Added by ReelsMeals: The chicken pieces are fully coated and the mixture looks thick and clings to the meat. Use your hands to massage the marinade into the chicken for even coverage.
Cover the bowl and marinate the chicken in the refrigerator for 2–3 hours to allow the flavors to penetrate.
Kitchen notes · Added by ReelsMeals: The marinade has been absorbed and the chicken looks slightly darker and fragrant. Cover tightly so the chicken does not dry out.
After marinating, drizzle 1–2 tsp of oil over the chicken and toss again to ensure the oil coats the pieces evenly.
Kitchen notes · Added by ReelsMeals: The oil glistens on the surface of the marinated chicken. Toss gently to avoid knocking off the coating.
Preheat the air fryer to 350°F (350°F).
Kitchen notes · Added by ReelsMeals: The air fryer indicator shows it has reached 180 C (350 F). Preheating ensures the coating crisps immediately.
Arrange the marinated chicken pieces in a single layer in the air‑fryer basket, making sure they do not overlap.
Kitchen notes · Added by ReelsMeals: The pieces sit in a single layer with small gaps between them. Overlapping will cause uneven cooking.
Air‑fry for 12–13 minutes, then open the fryer, flip each piece, and continue cooking for another 12–13 minutes, or until the chicken is cooked through and the exterior is golden and crispy (total 25–26 minutes).
Kitchen notes · Added by ReelsMeals: The underside is golden brown when you flip; the exterior feels firm and dry. Cooking time may vary slightly depending on the size of the pieces.
Remove the chicken, sprinkle a little extra chaat masala on top for added flavor, and serve immediately.
Kitchen notes · Added by ReelsMeals: The chaat masala sticks to the hot surface and releases a tangy aroma. Serve immediately for the crispiest texture.
