Method

  1. 1

Juice the apples, carrots, beets, and half a lemon using a juicer, or blend them with water and strain to obtain a clear juice.

  2. 2

Measure half a cup of the juice and place it in a bowl; sprinkle the gelatin over the juice and let it bloom for 5 minutes.

  3. 3

Warm the remaining one and a half cups of juice over low heat, ensuring it does not come to a boil.

  4. 4

Add the bloomed gelatin to the warm juice and whisk continuously until the gelatin is fully dissolved.

  5. 5

Pour the gelatin‑infused juice into silicone gummy molds, filling each cavity evenly.

  6. 6

Refrigerate the molds for 2 to 3 hours, or until the gummies are firm to the touch.

  7. 7

Remove the gummies from the molds and store them covered in the refrigerator; they keep for 5 to 7 days.

Tips while you cook

Bloom gelatin first
Sprinkle the gelatin over half a cup of juice and let it sit for 5 minutes before heating.
Heat gently
Warm the remaining juice over low heat and avoid bringing it to a boil.
Chill until firm
Refrigerate the filled molds for 2 to 3 hours before removing the gummies.
