Traditional Portuguese Caldo Verde Soup

Ingredients

  • 3 Chorizo Sausage
  • 2 Potatoes
  • 1 Onion
  • 8 Garlic
  • as needed Chicken Stock
  • 1 Kale
  • Pepper

Instructions

  1. Start by chopping your chorizo into small discs, and fry them in a hot pan. Allow the oil from the chorizo to render, and wait til the pieces are crisp before removing from the container. Set aside for later.
  2. Into the pot with chorizo oil goes the chopped onions, potatoes, and garlic, and saute until softened.
  3. Pour chicken stock and allow the soup to simmer to soften the potatoes, before going blending to create a rich broth. It should have a thick consistency.
  4. Add back in your chorizo along with some chopped Kale, Serve hot and enjoy!
