Traditional Portuguese Caldo Verde Soup
A traditional Portuguese soup made with chorizo, potatoes, onions, garlic, and kale. It's a hearty and comforting dish that's perfect for a cold day.

Ingredients
- 3 Chorizo Sausage
- 2 Potatoes
- 1 Onion
- 8 Garlic
- as needed Chicken Stock
- 1 Kale
- Pepper
Instructions
- Start by chopping your chorizo into small discs, and fry them in a hot pan. Allow the oil from the chorizo to render, and wait til the pieces are crisp before removing from the container. Set aside for later.
- Into the pot with chorizo oil goes the chopped onions, potatoes, and garlic, and saute until softened.
- Pour chicken stock and allow the soup to simmer to soften the potatoes, before going blending to create a rich broth. It should have a thick consistency.
- Add back in your chorizo along with some chopped Kale, Serve hot and enjoy!
