Method

  1. 1

Heat a large skillet over medium‑high heat and add the beef tallow. When the fat is shimmering, add the diced onion, red bell pepper, and green bell pepper; sauté for 3–4 minutes, stirring frequently, until they begin to soften.

  2. 2

Add the ground beef to the skillet, breaking it up with a spatula. Let it sear without stirring for about 2 minutes to develop a crust, then continue to crumble and cook until browned.

  3. 3

Stir in the minced garlic, ginger paste, sliced green‑onion whites, and chopped basil. Cook for another 1–2 minutes until fragrant.

  4. 4

Season with salt and pepper, then pour in the soy sauce, fish sauce, honey, and brown sugar. Mix well and continue cooking for 2–3 minutes, allowing the sauce to caramelize and the mixture to become slightly crisp. Taste and adjust seasoning if needed.

  5. 5

In a bowl, whisk together the chili crunch, honey, seasoned rice vinegar, toasted sesame seed oil, salt, and garlic powder to form a dressing.

  6. 6

Add the thinly sliced cucumber to the dressing, toss to coat, and let it sit for 5 minutes to absorb flavors.

  7. 7

To assemble each bowl, place a generous portion of the Thai basil beef at the bottom, top with the chili‑crunch cucumber mixture, and garnish with crushed peanuts, sliced green onions, extra sesame seeds, a drizzle of sriracha mayo, and fresh chopped cilantro. Serve immediately.

Tips while you cook

Sauté vegetables first
Sauté the diced onion and bell peppers for 3–4 minutes before adding the beef.
Allow cucumber to absorb dressing
After tossing the cucumber with the chili‑crunch dressing, let it sit for 5 minutes before assembling the bowl.
