Method

  1. 1

Dry‑roast the fresh grated coconut in a heavy‑bottomed pan over low‑medium heat for 3–4 minutes, stirring constantly until lightly golden and fragrant.

  2. 2

Add the ricotta cheese to the pan and cook, stirring gently, for about 10 minutes. Keep the mixture soft and prevent it from drying out.

  3. 3

Stir in the sweetened condensed milk and continue cooking for another 10–15 minutes, or until the mixture thickens and begins to pull away from the sides of the pan.

  4. 4

Mix in the milk powder and cardamom powder, cooking for an additional 3–4 minutes until fully incorporated and the texture is smooth.

  5. 5

Grease a shallow container with ghee, then transfer the hot mixture into it, pressing gently to create an even layer.

  6. 6

Optionally sprinkle crushed pistachios or almonds, a pinch of saffron, and dried rose petals on top for garnish.

  7. 7

Refrigerate the set kalakand for at least 3–4 hours, preferably overnight, to firm up.

  8. 8

Cut into small squares and serve chilled.
